ARRASTU

Soft blue cheese, predominantly sweet with green/grey mould. It is consumed after at least 30 days.

The flavor is sweet and the aroma is typical of mushrooms, slightly ammoniacal with lactic notes of fresh butter.

The paste is soft, sometimes quite creamy near the infiltrations of mould, it is white or light ivory in colour.
